Pumpkin Chili

Ingredients Directions

¼ c vegetable oil
1 c onion, chopped fine
1 c chopped red pepper
1 c chopped green pepper
2 lb. lean ground turkey
4 cans,15 oz, diced tomatoes
2 cans, 15 oz, kidney beans
2 cans, 4 oz , chilis
1 c corn, canned or frozen
1 c cooked pumpkin
2 tbsp chili powder
2 tsp cumin
2 tsp salt
1 tsp pepper

Heat the oil in a large pot over medium heat. When oil is hot- add onions, sauté onions with 1 tsp of salt. When onions are translucent add cumin and chili powder. Stir to combine. When fragrant add peppers and sauté until soft. Add the turkey and continue to cook and break up meat until mostly cooked through.
Now add the canned items, corn and pumpkin. Add the last tsp of salt and the pepper. Bring chili to a boil, stirring constantly and then turn the heat down and let it simmer for at least 30 minutes.
Taste to adjust salt and pepper.
