Mochi

Ingredients Directions

1 c glutinous rice flour
1 c water
¼ c sugar
Potato starch for dusting

In a microwave safe bowl mix rice flour and sugar. Add water, mix thoroughly.
Microwave on high 4 minutes, stirring occasionally. Dust a surface with potato starch, pour out the mixture, dust top also. Roll out dough to ¼ inch thick, adding more starch as necessary. Refrigerate 15 minutes until firm. Cut dough into 2 ½ inch squares. Brush off excess starch. Place one mochi square on plastic wrap- top with a 3-5 small balls of ice cream, wrap mochi around the ice cream using the plastic wrap to help hold it together. Place in a muffin tin and freeze. Repeat.
