Ingredients Directions

1 head cauliflower, chopped
2 eggs
1 cup shredded mozzarella
¼ c. grated parmesan
1 Tbsp. Italian seasoning

SAUCE
4 oz. tomato paste
2 Tbsp. olive oil
2 cloves garlic, minced
½ tbsp. dried oregano
½ Tbsp. dried basil
½ Tbsp. dried rosemary
Pinch of salt and pepper

 

Preheat oven to 425 degrees. Line a heavy baking sheet with parchment paper. In a food processor pulse the cauliflower until finely ground. Using a tea towel or cheesecloth squeeze as much water out of the cauliflower as possible. Put cauliflower into a large bowl. Stir in cheeses, eggs and Italian seasoning.
Heat olive oil in a sauce pan, add garlic, sauté, then add the rest of sauce ingredients. Simmer.
Spread the cauliflower mixture onto the sheet pan, press down, bake for 10 minutes. Top with the pizza sauce and bake 5 more minutes.
