1 head cauliflower, chopped
Preheat oven to 425 degrees. Line a heavy baking sheet with parchment paper. In a food processor pulse the cauliflower until finely ground. Using a tea towel or cheesecloth squeeze as much water out of the cauliflower as possible. Put cauliflower into a large bowl. Stir in cheeses, eggs and Italian seasoning.
