Blueberry Granola Bars
1 ¼ c oatmeal
Line 9x9 baking pan with 2 strips of parchment cut to fit crisscross with extra hanging over to ensure easy removal, or aluminum foil sprayed with nonstick.
In a bowl mix oatmeal, almonds and salt, add vanilla, honey, almond butter, lemon zest, lemon juice and dried blueberries. Stir until well combined.
Spread mixture into pan and pack down evenly and tightly. Freeze for one hour. Remove from pan and place on cutting board, cut into 10 pieces.
